Chicken Salsa Taco's

1 chicken breast 1 teaspoon olive oil ¼ cup zucchini 2 tablespoons onion 1-2 garlic cloves; diced 2 tablespoon of Green peppers; diced ½ cup of red salsa (I LOVE chucky) Dash of salt (salsa is a little salty) & sprinkle of pepper Directions Toss the veggies with salt and pepper in a bowl then place in a baking sheet. Place the chicken in the middle and add the salsa over the top. Bake for about 25mins and then remove. Shred chicken a little open and then mix all ingredients together and place on top of the chicken and bake for 10 more mins until the chicken and flavors are all mixed. Add cheese, lettuce, tomatoes, and avocado. Quick FRESH/RAW “Pico” like….. I love to add ½ avocado (diced), tomato, cilantro, dash with lemon/lime and sprinkle with salt & pepper. These are great as left overs, but I preheated it on the stove top I like tacos with corn on the cobb

Greek Goddess Honey & Strawberry Yogurt   One layer of granola 1/4 cup Layer of Blackberries 6-10 1 whole banana; sliced 1/8 inch 5-8 strawberries; sliced Banana Strawberry Blackberries Instructions; Start with a layer of granola, yogurt, blackberries & bananas, granola, yogurt, strawberries & bananas, and top off with the rest of the tasty treats, I usually wait a few mins to get the granola a little soften. I love this for the beach,  great healthy snack for after school snacks or workout, or work I hope you enjoy... Perfect for taking to work for the week. I really thought I was cool, I decided to write a list of some amazing taco spots in NYC. I even went to Brooklyn to try a few. Some have closed down and some had really put a memory in my brain (I want to KEEP going back). Even know people say "its the same place different location" it really isn't. I rather eat at San loco in the LES VS Brooklyn. I don't know why, they just do it well/better.... Any who here are my spots in the need of trying. I will come back and rate them, but will also come up on my YELP page (checking in). I don't know IF you noticed, but I'm Yelp Elite now. I get in on all the details. I've meet a lot of friends too. Happy Mother's Day

I've been getting messages, emails, and texts about what to get momma bear for Mothers Day. I don't normally celebrate this day with my mom. Although, I do make sure to send a card with my best friends mom. She shines in my heart and I love her to death. She has really helped me through the past few years to be ME.... I can't thank her enough. I always make an effort to make her cry (sounds sad), but when I talk to her or see her its hard because we are just crying most of the time.
