Salmon Risotto Dinner

Today I made an amazing dinner.... Middle piece of Salmon Fillet 2 tablespoon Guava Honey 1 tablespoon pure sesame oil 1 tablespoon soy sauce Grated fresh ginger Mix all ingredients Cover Salmon with sauce, make sure sides get some too Preheat over to 350 Bake for 10 to 12 minutes uncovered Double check, salmon should be flaky and sides a little crispy from the sauce Trader Joe's boxed risotto goes great with this. OH MY GOODNESS, it's only 2.59 Cook as stove directions 1 tablespoon olive oil 3 cups hot water seasonings (in box) Heat stove to medium heat Add olive oil and rice for about 1 to 2 minutes Add 3 cups of water and wait to vicariously boils Reduce heat to a simmer, cover and stir occasionally once all water is absorbed add cheese Serve warm Serve on the side Trader Joe's has fresh edamame and I served this in an arugula, corn tortilla, sunflower seed, with tomatillo verde dressing, super tasty..

Spiced Pumpkin Cheesecake

Spiced Pumpkin Cheescake 38 nabisco cookies Ginger Snaps finely crushed 1/4 cup finely chopped Pecans 1/4 cup butter, melted 4 package cream cheese, softened 1 cup sugar 1 can pumpkin 1 tsp pumpkin pie spice 1 tsp vanilla 4 eggs 1 cup thawed cool ship for topping 1/2 tsp ground nutmeg Heat oven 325. Mix crumbs, nuts, and butter. press onto bottom and 1 inch up side of 9-inch springform pan. Beat cream cheese and sugar with mixer until blended. Add pumpkin, spice, and vanilla; mix well. add eggs, 1 at a time, mixing after each just until blended. Pour crust. Bake 1 hour 20 minutes to 1 hour and 30 minutes or until center is almost set. Loosen cake from rim of pan; cool before removing rim. Refrigerate 4 hours. Serve with a dollop of COOL WHIP and a dusting of nutmeg.

Kale Crisps With Sea Salt and Lemon

1 pound Tuscan Kale, thick stems removed and leaves sliced crosswise into 2-inch ribbons 2 tablespoons extra virgin olive oil finely grated zest of 1 lemon flaked sea salt or coarse salt, for sprinkling Preheat over to 375. Toss kale with oil, spread in a single layer on each of the 2 rimmed backing sheets halfway through, until crisp, about 15 minutes. Let cool on sheets. Sprinkle with lemon zest and salt, and toss to coat.

Garlic Chive Mash Potatoes & Gravy

I'm not sure these go together, but we will see. I wanted to try some NEW mash potatoes and this gravy looks super tasty in the butter nut squash. I really just wanted it for presentation, but I also believe the butternut squash will give it a tasty flavor....Ummm my chops are already ready.....Lip smacking good is all I can say... 1 2/3 cups milk 2 garlic cloves, smashed 3 pounds Yukon Gold potatoes, peeled, and cut into 2 inches cubes 3 tablespoon unsalted butter 1/4 cup 2 percent greek yogurt 1 tablespoon chopped fresh chives coarse salt and fresh pepper garnish: 2 tablespoon chives 1. Wild Turkey (young farm grown turkey)

There is no tofu-turkey here. I'm all about the meat this year :) I've never even tried the tofo-tukey, but I love turkey so I wouldn't ever....Ha Dry Brine Roasted Broad breasted White Turkey (pretty sure I want to do this one) For dry brining; 1 whole fresh or thawed frozen turkey (half day to unthaw). Mine will be white and brown meat, because I like brown too :) coarse salt and ground pepper 2 teaspoon coarsely chopped fresh thyme for roasting: 3/4 cup finely chopped fresh sage, plus 6 sprigs 1 tablespoon finely chopped fresh thyme, 12 sprigs 4 tablespoons unsalted organic butter, softened 3 dried bay leaves 2 tart granny smith apples, 1/2 inch thick (cores reserved) 1 onion, quartered 2 celery sticks, sliced crosswise into 1 inch pieces (i have diced) 2 cups water, plus more if needed 1. Dry-brine the turkey: one day before toasting, rinse turkey inside and out; pat dry with paper towels. Mix together 1/2 cup salt and the chopped thyme, and season with salt and pepper.

My Own Thanksgiving Tradition...

This year I will be making the whole turkey dinner myself. I'm super excited and I have used a few recipes from my favorite food stars: Martha Stewart, Rachael Ray, and of coarse the Neely's along with some help from Trader Joes. Each year I will make adjustments, eliminations, and changes to improve the recipes as I feel/need. I enjoy cooking way to much, but this is definitely the MOST I've ever done. I always cook the food and then post it, but this time I want everything at my finger tips and don't to flip through magazines and articles, and helps with shopping...

Arugula-Prosciutto Pizza

1 Trader Joes prepared garlic and herb pizza dough all purpose flour for dusting 4 tablespoon of olive oil 1 garlic clove grated or finely diced 1 teaspoon tarragon dash Kosher Salt and Coarsely Ground Pepper 1\2 cup shredded mozzarella cheese 4 cups baby arugula 1\4 cup finely chopped onion (red or white) OR shallot Juice of a lemon juice or Champagne lemon/citrus vinaigrette 3 ounces thinly sliced prosciutto shaved Parmesan cheese optional: 1/4 cup Ricotta cheese Place pizza stone or upside down baking sheet in the over and preheat to 450. Roll out dough on a slightly floured surface into a 12-inch round. Add cornmeal to the stone before placing the dough on top the hot pizza stone or baking sheet. Bake for 8 minutes. Meanwhile, combine 2 tablespoons of olive oil in a bowl with the garlic, tarragon, and salt/pepper to taste. Remove the pizza from the oven,, brush with olive oil mixture, and top with the ricotta cheese and mozzarella. Return the pizza to the over; bake until the chees
