Arugula-Prosciutto Pizza









1 Trader Joes prepared garlic and herb pizza dough
all purpose flour for dusting
4 tablespoon of olive oil
1 garlic clove grated or finely diced
1 teaspoon tarragon
dash Kosher Salt and Coarsely Ground Pepper
1\2 cup shredded mozzarella cheese
4 cups baby arugula
1\4 cup finely chopped onion (red or white) OR shallot
Juice of a lemon juice or Champagne lemon/citrus vinaigrette
3 ounces thinly sliced prosciutto
shaved Parmesan cheese

optional: 1/4 cup Ricotta cheese

Place pizza stone or upside down baking sheet in the over and preheat to 450.
Roll out dough on a slightly floured surface into a 12-inch round. Add cornmeal to the stone before placing the dough on top the hot pizza stone or baking sheet. Bake for 8 minutes. Meanwhile, combine 2 tablespoons of olive oil in a bowl with the garlic, tarragon, and salt/pepper to taste.

Remove the pizza from the oven,, brush with olive oil mixture, and top with the ricotta cheese and mozzarella. Return the pizza to the over; bake until the cheese if golden and bubbly, about 6 mins.

Meanwhile, toss the arugula and shallots/onion in a large bowl with the lemon juice or vinaigrette, the remaining 2 tablespoons olive oil, and salt and pepper to taste. Top the pizza with the arugula salad, prosciutto and shaved Parmesan. Cut into slices.
