Roasting Spices

Over the years I still get introduced to spices, tools and useful instruments to make my cooking easy. In addition to moving every year my boxes for the kitchen seem to add up. This is one tool you must have in the home Mortar and Pastel. Martha Stewart sells them at many locations ( Macy's, K Mart, and Bed bath and beyond). Although Macy's and Bed bath and beyond has a few different brands. Roasting spices seems tedious but is really easy. 1 cup of any spice ( any spice that is a seed; coriander, cumin, ginger ) Place in a med to low heat on a stove Take off the heat and let it cool for a min or two Place in the Mortar and Pastel. These spices can be stored up to 6 months When roasting spices makes it easier and eatable for every meal used. If you are a fan of cooking with fresh spices this is one tool you kitchens needs!

This Sunday December 12, 2009 we had a holiday party at Barrio's . As much as my coworker reams on me because he didn't like the food (he doesn't enjoy trying new things, so he rather eat a burger from McDonalds) isn't going to keep me from letting my fans know about it. This is one place if your open to try good food and not complain about what is in it, here you go. Although, they have the most basic meals on their menu; tacos, salsas (try the verde one), steak, slow braised ribs etc. They have the best moles and added ingredients I've had in a while. The environment weather your eating happy hour or having a gathering is very complimenting. I enjoyed the enchiladas; chicken en adobo jack and oaxaca cheeses, black bean-roasted garlic sauce and red chile rajas . $14 .00 . I thought for $14.00 these were amazing. Most Important meal of the day.....

Indeed it is and I like to spend most of my morning sleeping in and making breakfast with a great cup of my favorite hazelnut flavor too. French Toast 1/2 teaspoon of cinnamon 1/2 teaspoon of vanilla 1 tablespoon of water 2 to 3 eggs Whisk up all ingredients and dip bread pieces and adding to the pan. Cook 2 to 3 mins on each side with butter or oil to the pan for a little added crust for texture. Remember butter adds a bit of flavor too. Once all pieces you want are cooked you can cook the remaining eggs with an added additional egg. During this time you can also slice off two pieces of sausage; Jimmy Dean's is my favorite, but you can use any choice. This is a simple meal and all ingredients are usually in there, which makes it easier for each week. Don't forget you don't have to ONLY have breakfast in the morning this is a great meal for dinner too. Tip- Switch sausage for hamburger meat and add some potatoes for a meal another day. Tip of the day......

Ever cooking in a hurry and your cutting board is moving all over the place? I decided to set down a paper towel and it still kept moving. Finally I had a surface that was a little damped and I moved it over on that side of the counter and it didn't move anymore. Tip: Add a little water to your paper towel and put one on each side of the cutting board. Its amazing what things you find out when cooking in a hurry...Although this is a dangerous move on my part, I almost cut my finger off. Tip of the day.....

Have you ever prepared to make fried chicken with all the ingredients, but most of the time it asks for buttermilk or eggs? At this time that means a trip to the store....urghhhh : ( 1 cup of milk ( any 1%, 2%, or ever low fat will work) 1 teaspoon (or one squeeze of half of a lemon) let the ingredients sit for 5 mins. this allows you to keep your comfy cloths on, and snuggle up to a great cup of cocoa while your ingredients are mixing up. Stay warm and keep listening.

Trips, Food, and Great Ideas

Its been a while, but I haven't stay out of the kitchen. I've been mixing up new ides, finshing a cookbook, and producing meals for many of my closest friends. Its time for me to share all the treats I have been making over the last few weeks. Also to tell you about my trip in LA. Finally I was able to experience a whole new side of the west coast that I much apprecaite since I have been. I happen to visit some of the most exciting yet impressive hole in the wall spots.
