FALL Veggie Enchiladas

I wasn’t too sure about making this last night, but then I tasted it after it was done. “HOLY MOLE” this MIGHT be the best enchiladas I’ve made. No meat and still delicious, always my favorite. Keep it simple and you will always get the best results. Ingredients Yellow Squash Zucchini Onion Green Pepper "Real "Frozen Corn (frozen or from TJ's) Canned sliced olives (8oz can) – ½ the can Wheat and Flour Tortilla – 1 package (8 tortillas) 1 cup of four cheese blend 1 cup of Mexican blend Homemade “overnight” Black beans (made these one day before); (Ree Drummonds Recipe); OR black beans from the can Red Mild Enchilada sauce (Trader Joes, taco bell, Ortega, Goya); anyone it doesn’t matter) – 12oz can Directions Dice up all veggies and sauté in a medium pan and then add the frozen corn about 5 mins later in olive oil. Add a little pepper and dash of salt until squash and zucchini are almost cooked. Remove from heat and set aside. I use Trader J

Rumba Cubana Restaurant

I moved to N. Bergen about a year ago, and this week I'm finally going to Rumba (I live five blocks walking). This is a place where everyone comes on Friday, Saturday, and Sunday. I see people getting all dolled up to hit this spot. The parking garage is always full and people are always waiting. It kind of reminds me of the red lobster line in Manhattan. I stopped in to this spot on Sunday right before my game was suppose to start and I was hoping (more like praying) they have it. I was always worried about everyone being dressed up. Then again anyone who knows me, knows that I am NOT shy, but I am kind of at first.   Well about 3 months ago they opened up a lounge above. Great bar seating, table and side seating too. It has a family, friend, and great for group atmosphere. They have great drink choices, with a lot of people ordering food. I see people getting the appetizer and sharing it, but the dining area is LIVE. They play music up in the lounge that really sets

Events in the City (NYC)....

I really love NYC for these very reasons. This summer there was sooo much going on. I TRY my hardest to attend more events as long as I have the funds and its easier when they are FREE. these sites will allow you to get your public, concerts, food events. I love going to BIG events, because people from around the WORLD come to hang out. I love meeting people from around the world in fact this is the best way to learn culture and just about LIFE. I have a few websites that I believe you MIGHT want to sign up or just look at from time to time. I'm always learning about new places to go and I'm a person who doesn't like to learned that I missed something cool. These sites are what the tourists don't know... events, concerts, great brunches, and viewings and more. Pulsd brunches, events, promotions in NYC, who to meet in NYC and where, national __"WHAT"_ day? DONT even think this is cliché, but I like this website because it keeps me in the loop of things
