Kidney Bean Salad

KIDNEY BEAN SALAD

1 can red kidney beans
1/2 c. chopped celery
1/4 c. chopped onion
2 or 3 hard boiled eggs, chopped
Salt and pepper to taste
1 c. mayonnaise
Vinegar (enough to thin mayonnaise)
Sugar (enough to take tartness off)
1/8 to 1/4 tsp. dry mustard

Mix kidney beans, celery, onion and eggs; set aside. In a bowl mix mayonnaise, salt and pepper, vinegar, sugar and dry mustard. Mix well, then taste to see if you added enough sugar to take the tartness out. If so, pour over bean mixture and stir carefully. chill 1-2 hours. Serves 4."
