Empanada Time



I spent the afternoon with my friend/sister this afternoon and she made an amazing delicious lunch. I had to let you ALL know about this. This is going to be FUNNN.....

She is currently stuck on this Empanada's fix, but you literally can make anything in them. Cheese is the MAIN tasty ingredient.
Lentil Bean Empanadas (Savory) by Sydney Mintle (@sydneylovesfashion)

1 cup of Trader Joe already made lentil beans (in a package)
1 package of store bought pie crust
1 cup mozzarella cheese
1 teaspoon curry powder
Flour for sprinkling
egg yolk for brushing the outside of the Empanadas

Mexican Style Empanadas (Sweet): food network recipe
1/2 cup Pineapple
1/4 cup Carmel
1/2 cup mozzarella add more if you like
Cinnamon and sugar for sprinkling
one egg for brushing the outside of the Empanadas

Roll out the pie crust with flour underneath to prevent from sticking. Use a medium size serving bowl or large coffee mug to cut out the Empanada shells. Set them on parchment paper, which is on top of the baking sheet.

FOR THE SAVORY EMPANADAS
Add the mozzarella, lentils, and a little curry powder. Mix well and add to the pie crust on one side. Brush egg whites on the edges of the crust before completely closing it. Using a fork press the edges (this makes it stay closed). Fold over the pie crust in the shape of an Empanada.

Repeat until all Empanadas are stuffed full of goodness and then brush with egg yolks on all the Empanadas and toss in the over at 350 degrees until golden brown (about 15 to 20 mins)....every oven varies.

FOR THE SWEET EMPANADAS
Repeat the same steps for the Sweet Empanadas, add all ingredients one by one. Pineapple needs to be drained really really good and set aside and then strained one more time before adding (as it sits you will notice it starts to get juice again (MAGIC).

add the cheese, pineapple, and then Carmel then close with the same process and steps. There are sooo simple and the kids LOVE to help with this...

Make about 5 per two pie crust. These are PERFECT for a party or appetizer too Made about 6 to 8 large empanadas

If you use a mug you get more bite size empanadas. These are GREAT crowd pleasers.
