Simple "Poblano Pepper" Tasty Salad
Main Ingredients
Cilantro chopped finely; 2 teaspoon
Orange Slices diced; 1/4 cup
Red Onion chopped 1/4 cup
Poblano Pepper: 2 tablespoon of the pepper, just a little bit for a lite kick.
Jicama 1/4 cup; great to help balance the peppers
Mix
Yellow and Colored Raisins; shopped roughly 3 tablespoons
Pumpkin Nuts (green); 3 tablespoons finely chopped
Quinoa 1/4 cup
Dressing
Garlic 1 clove; chopped finely
Olive Oil 1/3 cup
Lime Juice 1 lime
Salt and pepper for seasoning the dressings and salad when finished
Cut, chop, and dice all main ingredients, add the mix ingredients (leaving the Quinoa aside), whisk the dressing separately and then add to the salad ingredients. Serve over the bib lettuce then add the Quinoa add salt and pepper and dressing.
This salad is amazing. I honestly ate this weekly for four weeks. There isn't much of a recipe. Just start chopping and add how much you want to the salad. Delicious. The flavors are outstanding.
