Chicken Salsa Taco's
1 chicken breast
1 teaspoon olive oil
¼ cup zucchini
2 tablespoons onion
1-2 garlic cloves; diced
2 tablespoon of Green peppers; diced
½ cup of red salsa (I LOVE chucky)
Dash of salt (salsa is a little salty) & sprinkle of
pepper
Directions
Toss the veggies with salt and pepper in a bowl
then place in a baking sheet. Place the chicken in the middle and add the salsa
over the top. Bake for about 25mins and then remove. Shred chicken a little
open and then mix all ingredients together and place on top of the chicken and
bake for 10 more mins until the chicken and flavors are all mixed. Add cheese, lettuce,
tomatoes, and avocado.
Quick FRESH/RAW “Pico”
like…..
I love to add ½ avocado (diced), tomato, cilantro, dash with
lemon/lime and sprinkle with salt & pepper.
These are great as
left overs, but I preheated it on the stove top

on the cobb
